Preferring seasonal greens for more flavors does not mean to dispense on salads in winter. Much more veggies can be eaten raw than those traditionally used for creating salads.
This mixture is made of coarsely chopped spinach and finely chopped Kale. Some non seasonal date tomatoes to give a bit of juice. I am not a fan of vinegar in salads, but in this case a white balsamic vinegar gives sweetness and more juice. Obviously the best Olive Oil you have in the kitchen.
You normally don't have a salad alone. So the choice of the wine is mostly determined by your main dish, but try a non too acidic aromatic white like a Gewuerztraminer with this salad
