A singularity dish

you know there are dishes you create, they are unique,  You would like to repeat them, but you know it will be   impossible. This was  one of this. "peperoni con la mollica" (/node/5596), a standard dish from Italians South. But I will hardly ever be able to  produce the same "mollica" It was from a home made bread, which, well, was not a great success, It was a nice mixture of      type 0 and type 1 flour  from Janas with a   lot of seeds. But the yeast did not succeed to raise it, so it was quite compact and after some days not really usable any     more.  But I grated the last piece which was    left and used part of the crumbs for the pepper dish.

you can not imagine the explosion of flavours  from the breadcrumbs.

I had open a bottle  of Sagrantino bubbles to cheer an aniversary and it paired heavenly. But also another  open bottle (Divina Villa, Etichetta Bianca) associated well.
